Pick up a cooked chicken from the grocery store, debone and let cool. Place chicken on a large bowl full of lettuce (I use romaine) with sliced red cabbage, julienne carrots and green onions. As much of each as you would like.
Add one large can of mandarin oranges (because if you are making this with the kids around you know there will be snacking and a small tin just won't do) and sprinkle with sesame seeds.
Toss with the yummy dressing (below). Fried noodles can be added to the top or put in a separate bowl on the table.
1/2 cup mayonnaise
5 Tablespoons rice vinegar
2 Tablespoons sugar
2 Tablespoons toasted sesame oil
1 Tablespoon soy sauce
1/4 teaspoon garlic powder
Depending on time, you can cook your own chicken or use leftovers. You can also used pre-washed lettuce packs with cabbage and carrots included. But I am sure you already know those life-hacks in the kitchen.
